Pascale GADONNA-WIDEHEM is responsible of microbiology studies for the LaSalle Institute of Beauvais in HOTPOT program.
Since 2001, Pascale is assistant professor at LaSalle Beauvais where she lectures the Basis of microbiology, the Food microbiology, the systematic preventive approach to food safety (Hazard Analysis and Critical Control Points) and methods to determine the food shelf life. Since 2004, she is the head of the course “Food industry”, a speciality in the 4th year of the LaSalle Beauvais engineering degree.
Her research topic is the development of tools for microbial detection and quantification in food or non-food treated matrices.
Her objectives are to
-understand how process, hurdle technologies affect the growth or the destruction of microorganisms in the food
-qualify and quantify microorganisms in food with appropriate methods (media improvement,…)
-assess the risk to prevent health problems through food and water.
