On the 22nd September 2011 the School of Service Management were delighted to host a Hotpot forum.

The Hotpot programme is a collaboration between the School of Service Management and the Institut Polytechnique LaSalle Beauvais in France.

The project aims to provide innovative technologies for the production of affordable, nutritious food, with an extended life, that still meets the expectations of taste, as perceived by consumers.

The four-year research plan has developed knowledge and understanding of various issues, including that of microwave technology, and aspires to engage and support local schools and businesses.

The forum took place in the form four presentations followed by a question and answer session with a panel of experts. The presenters and experts were Pete Odgers, Harvey Ells, Ioannis Pantelides and Ken Woodward, who are all heavily involved in the venture.

Over the course of the day a variety of topics were explored, including current themes and issues in food policy, consumer behaviour in food and beverage service, design of healthy and sustainable food concepts for restaurants and the art of responsible eating.

There was also a presentation documenting the research and its findings to date and also one from recently graduated MSc students, introducing an original food concept.

It was unfortunate that the planned video hook up with LaSalle Beauvais in France was unable to take place due to technical difficulties at their end.

Local businesses as well as students and lecturers attended the event, which proved a great success.
